Saturday we woke up NICE and late and I finally broke the seal on my new Kitchen Aid Belgian Waffle maker, I really wasn't in the mood to read any instructions which is why I hadn't used it yet. I just glanced at the instructions enough to where if I broke it I didn't void a warranty and I whipped up some Trader Joe's Pancake mix. I felt guilty that I didn't make my own batter but I figure there'll always be a next time.
The machine is a beast and super duper easy. My simple mind thought it simply magical that it can make 2 waffles at once. I'm only used to that industrial sized waffle maker at the hotels that only makes 1 waffle at a time.
I had sliced mango that I threw on top, and I'm not over the moon about the taste of the organic syrup I have but we were all impressed with the turn out.
After our waffles we headed to Brooklyn to drop of folding chairs at Big C's Aunts house for a 4th of July BBQ coming up and we figured we'd check out a restaurant called "Do or Dine".
The name of the place is a spoof off the reference of where it's located in Bed Stuy which is often refereed to as "Bed-Stuy, Do-or-Die". Not sure I'd want to grow up in a place with such a name but it's amazing how much the place is changing due to gentrification.
By the time we made it to "Do or Dine" it still wasn't even open....the owner said once they're up on their feet they'll have longer hours but for now it only opens at 6 pm.
The owner was a nice enough guy who recommended a place called "Marrieta's" Two days later I don't even remember what Big C and I ate all I remember is the "Iced Coffee with Bourbon" ---> oh boy was it good!
When stomachs were all full we finally headed to our main Brooklyn destination which was the Brooklyn Cyclones Girl Scout event....as baseball goes the Brooklyn Cyclones sucked that night but the girls had a wonderful time culminated with fireworks and a sleep over at the field and a movie on the big score board.
I was a little bummed that we didn't stay for the sleepover as I had plans to meet friends and watch fireworks with them, which they half way through the game cancelled on. Unfortunately I didn't have any sleeping bags and sleep stuff in my car. Baby C was very upset and I promised her next year we'd stay for the sleepover. Big C wouldn't have been allowed to stay any way so it was gods will.
Sunday we woke up NICE and late once again and took a slow drive to drop Baby C off to spend the day at the beach with cousins...once again encroaching on a first for Baby C, last weekend her first night away from home, this weekend her first time at the beach without us.
Every year the news is inundated with terrifying news of a child drowning at the beach so this "first" was truly a big deal with me, and once again Big C spoke up with her pearls of wisdom and enlightened me with the fact that even though she's the youngest of her cousins she's also the ONLY one that can swim. (Even though I am clearly away of beach water being completely different to pool water).
Baby C had a blast as always and Big C and I got to once again have a 'Day Date' and we went to see "White House Down" which I was jut OK I could have waited for it to come out on DVD...but "The Container Store" that we visited after was a like a place called heaven...we went in for 1 thing and came out with 5 things....
Mmmm..waffles! I found a keto-friendly waffle recipe. So, I may still be in need of a waffle maker :)
